  • 4 large eggs 1 cup all purpose flour 1 cup caster sugar 1 tbs honey 1 pinch of salt 1 tsp baking soda 1 tbs apple vinegar some butter or shortening for the cake tin Instructions - Οδηγιες Grease and dust with flour the bottom of a round cake tin/pan (without hole in the middle). Line the bottom of the pan with baking paper and dust it with some more flour. Preheat oven to 340F (conventional heat). Using an electric mixer, beat the eggs with the sugar and salt until light and fluffy. They should triple or more in size. Add t the baking soda diluted in the vinegar and then the honey. Reduce the mixing speed and slowly add the flour.The batter should be relatively runny, like a thiner cake batter. Peel and cut the apples into small cubes. Spread them into the cake tin/pan. Pour the batter on the apples and shake the cake tin a bit so that they're all covered. Bake for 25 minutes or until a toothpick or knife comes out clean when inserted in the middle. Turn the cake tin over a serving plate so that the bottom of the cake becomes the top side. Carefully remove the baking paper. Dust with plenty of icing sugar and serve warm or at room temperature. Notes - Σημειωσεις The original Russian recipe calls for "Antonovka" apples, which are sour baking apples. However, as these are not readily available outside Russia, Granny Smith are a good subtitute. 3.2.2708
